A commercial mixer built for sustained, high-volume mixing in professional kitchens, the Sigma RED LINE 67 L combines two independent motors to drive a single robust bowl. The dual-motor arrangement divides the workload, allowing one motor to handle initial blending while the second motor takes over for prolonged kneading or whipping without overheating. This design delivers consistent torque across the entire speed range, ensuring even mixing of dense doughs, batters and emulsions without stalling or uneven results.
Operation begins by loading the 67 L bowl with ingredients. The operator selects either the first or second speed using the key selector on the electromechanical control panel. Each speed is governed by its own digital timer: the left timer sets the duration for the first speed, the right timer for the second. Once the timers are programmed, the mixer runs automatically through the sequence, switching speeds and stopping at the preset intervals. If the timers fail, the key selector overrides them, allowing manual operation at either speed until the batch is complete.
The 2.75 kW power rating reflects the combined output of the two motors and determines the electrical circuit required: a 400 V three-phase supply capable of delivering the current draw without tripping breakers. The 67 L bowl volume sets the maximum batch size, balancing capacity against the mixer's 182 kg weight, which requires a fixed position on the worktop or a sturdy floor stand. The footprint of 530 mm depth, 920 mm width and 1140 mm height dictates the space needed on the work surface or floor, including clearance for the bowl and any attachments.
Construction is rigid steel throughout, designed to resist flexing under load. The electromechanical control panel houses two digital timers and the key selector, protected by a sealed cover to prevent ingress of flour or liquids. Cleaning involves wiping the bowl and exterior with a damp cloth, removing flour residue from the control panel with a soft brush, and ensuring the timers and selector remain free of debris to maintain accurate operation.
An electronic control panel with two digital timers is available as an optional upgrade, replacing the standard electromechanical panel while retaining the same functionality. The mixer is categorised under heavy-duty commercial mixers in the Sigma professional catering range.
