A robust commercial mixer designed for demanding kitchen environments, the Sigma RED LINE model offers substantial capacity in a floor-standing unit. Two independent motors power the mixing tools, enabling each to operate at distinct speeds and durations. This setup distributes workload, minimises wear, and permits separate control over two mixing phases without halting operations or swapping attachments.
The mixer employs a planetary gear system, where the tool revolves around the bowl while spinning on its axis. This motion ensures ingredients are drawn from the sides and base, blending and aerating the mixture uniformly. Continuous motor operation allows the machine to manage dense doughs, batters, and emulsions that might overwhelm a single-motor unit of comparable size.
Operation is simple. The bowl is filled to its 230 litre limit, the appropriate tool attached, and either manual or timed mode selected. In timed mode, the left timer sets the first speed duration, and the right timer the second. Once configured, the machine executes the sequence automatically, transitioning speeds and stopping as programmed. Should a timer malfunction, the key selector bypasses it, allowing manual completion of the batch.
The structure is solid steel, engineered to withstand vibration and movement during intensive mixing. The footprint accommodates standard worktop layouts, and the height enables easy loading and unloading. The substantial weight ensures stability but requires placement on a reinforced floor and handling with equipment like a pallet truck.
The control panel features two analogue timers and a key selector. The left timer manages the first speed, the right the second, and the selector switches between manual and timed modes. An electronic panel with digital timers is available as an optional extra, though the standard panel is durable and easy to service.
A 9.95 kW power rating necessitates a three-phase, 400 V supply, typical in commercial kitchens. Installation must be performed by a qualified electrician to ensure safe operation. The 230 litre bowl capacity supports large batches of dough, batter, or sauce in one cycle, streamlining preparation in high-volume settings.
Cleaning is uncomplicated: the bowl and mixing tool detach for washing, and the control panel is sealed against splashes. Mechanical timers and the key selector can be wiped clean without damage risk. No lubrication is needed, and the motors are enclosed to block dust entry.
The standard model includes the electromechanical control panel. An electronic panel with digital timers is available upon request, providing more accurate time settings while retaining the same functionality.
This mixer is categorised as a heavy-duty floor-standing unit, suited for bakeries, central production kitchens, and food manufacturing facilities.
