Welded steel body
A twin-arms mixer kneads dough by folding and stretching it between two spiral-shaped tools that rotate in opposite directions. The overlapping paths of the arms draw air into the dough, lightening the crumb without the friction that overheats a single-spiral machine. The same motion keeps the dough temperature low, preserving yeast activity and extending fermentation tolerance for consistent rise and flavour development across large batches.
The operator loads the bowl with flour, water and other ingredients up to the 60 kg mark, then lowers the arms into the mix. A single start button engages both motors; the arms turn at matched speeds, pulling the dough from the sides of the bowl and pressing it against the centre. The operator monitors the consistency through the clear safety guard and stops the machine when the dough reaches the desired elasticity. The bowl is then wheeled away for dividing and proofing.
The SIGMA T-60 is built on a welded steel frame painted in a thick protective coating. The bowl and mixing arms are also steel, designed for easy removal so worn parts can be replaced without specialist tools. The control panel sits at waist height on the right side, housing a start/stop push-button and an emergency stop mushroom.
The 1.5 kW and 2.2 kW power ratings correspond to two speed settings, allowing the operator to begin mixing at a lower load and finish at a higher one without overloading the electrical supply. The 400 V three-phase connection is standard for professional bakery equipment, matching the supply used by deck ovens and retarder-proofers. The 340 kg weight requires a fixed installation on a solid floor, and the 610 mm depth, 850 mm width and 1420 mm height determine the space it occupies on the worktop or plinth.
Cleaning involves removing the bowl and arms, washing them in a separate sink, and wiping down the painted steel frame with a damp cloth. The disassembly process also allows access to the drive gears and bearings for periodic lubrication.
The T-60 is the 60 kg model in SIGMA's twin-arms mixer range, positioned for medium-scale bakeries and central production kitchens.
