Welded steel body
This mixer features two interlocking spiral tools that rotate in opposite directions, gently folding and stretching dough. The design ensures even oxygenation while minimising friction, preventing excessive heat build-up. This promotes proper gluten development, leading to a smoother, more elastic dough that rises predictably and bakes evenly, suitable for bread, pizza, or enriched doughs.
Ingredients are added to the bowl, the lid is secured, and the mixing cycle is selected. The overlapping motion of the arms pulls the dough from the sides to the centre and back, ensuring thorough mixing. A clear lid allows the operator to observe the process without interrupting it. Once complete, the arms lift, and the bowl can be removed for proofing or further handling.
Constructed on a welded steel frame with a corrosion-resistant paint finish, the T-120 is built for durability. The bowl and mixing tools are also made of steel and can be easily disassembled for cleaning or replacement. The control panel is positioned at a convenient height for the operator.
The mixer operates on a three-phase 400 V supply, typical for professional kitchens with heavy-duty equipment. With a 120 kg capacity, it handles large batches in a single cycle, reducing the need for multiple loads in high-volume production. The unit weighs 720 kg, requiring a solid floor and mechanical handling such as a pallet truck or forklift. Its dimensions—930 mm deep, 1,100 mm wide, and 1,840 mm high—necessitate a dedicated space, ideally positioned against a wall or in a corner for safe operation.
Maintenance involves removing the bowl and arms for washing in a sink or dishwasher, while the painted steel surfaces can be wiped down with a damp cloth. The disassembly process is designed to be quick, allowing the machine to be returned to service promptly.
The T-120 is designed for medium to large bakeries and central production kitchens.
