A planetary mixer built for continuous service in professional kitchens, the Sigma Green Line 67 Litre Heavy-Duty Mixer combines a powerful drive with a large-capacity bowl to handle doughs, batters and creams in volume.
Planetary mixers use a single motor to rotate a mixing tool on its own axis while the tool simultaneously orbits the stationary bowl. This dual motion pulls ingredients from the sides and bottom of the bowl into the centre, ensuring even incorporation without dead spots. The method is particularly effective for dense mixtures such as bread dough, where a spiral mixer would leave unmixed pockets, and for aerated batters that require consistent shear.
Operation begins by lowering the bowl onto the base and securing it with the safety guard. The operator selects the speed—low for initial blending, high for final aeration or kneading—and sets the digital timer. Once started, the tool follows its planetary path until the timer elapses, at which point the motor stops automatically. The bowl can then be removed for scraping or portioning, and the guard ensures the motor cannot restart while the bowl is off the base.
The mixer is constructed on a thick steel frame that absorbs vibration and supports the 67 litre stainless-steel bowl. A single 2.2 kW motor drives both the tool rotation and the orbital motion, eliminating the need for separate gearboxes and reducing maintenance points. The control panel is mounted at eye level and includes a digital timer for precise process control.
A 400 V three-phase supply is required, matching the standard circuit used in commercial kitchens for heavy equipment. The 182 kg weight ensures stability during operation but means the unit must be positioned on a solid floor or a purpose-built stand. The footprint of 530 mm by 920 mm allows it to fit against most worktops while leaving space for ingredient trays alongside.
Cleaning is limited to the parts that contact food: the bowl, mixing tool and guard. These are removable and dishwasher-safe. The frame and motor housing are wiped down with a damp cloth; no water should enter the control panel or motor vents. Regular inspection of the bowl guard and safety interlock is recommended to maintain compliance with current safety standards.
The Green Line 67 Litre model is part of Sigma's heavy-duty range, positioned for bakeries, central production kitchens and large catering operations where batch consistency and durability are critical.
