A spiral mixer draws the dough into its rotating spiral hook, folding and stretching it continuously against the stationary bowl wall. This kneading action develops gluten strands evenly without overheating the dough, giving the elastic, smooth texture needed for pizza bases, bread and sweet pastries.
The operator lowers the spiral hook into the bowl, adds flour and liquid through the safety grid, then starts the motor. While the spiral turns, the grid remains in place, allowing ingredients to be added without stopping the machine. The transparent grid also lets the operator watch the dough's consistency as it forms. Once the dough is ready, the hook is raised and the bowl removed for dividing and proving.
The IR33 is built with a 33 litre stainless-steel bowl and a matching AISI 304 stainless-steel spiral hook. A single-speed motor drives the spiral, and the control panel includes an on-off switch and a safety interlock that stops the motor when the grid is lifted.
The 1.5 kW motor requires a 400 V three-phase supply, the standard for professional kitchen equipment of this size. The 126 kg weight keeps the mixer stable during operation, and the 460 mm depth, 840 mm width and 730 mm height fit a worktop or mobile stand. Wheels with brakes can be added to move the unit between stations.
Cleaning is limited to the parts that touch the dough: the bowl, spiral hook and dough-splitting rod are all removable and dishwasher-safe. The stainless-steel surfaces resist corrosion and can be sanitised after each use.
Variants include a two-speed model and a variable-speed model, both available as upgrades. The mixer is categorised under professional dough preparation equipment for pizzerias, bakeries and patisseries.
