A spiral mixer draws the dough up its rotating spiral and then folds it back into the bowl, repeating the motion until the gluten network develops evenly. This kneading action is gentler than a planetary hook, so the dough stays cooler and the yeast remains active for a longer rise. The result is a smooth, elastic dough that holds gas well and gives a light, open crumb in bread, pizza bases and sweet pastries.
The operator places the dry ingredients in the bowl, starts the mixer on low speed to combine them, then adds the liquid through the safety grid while the spiral turns. Once the dough begins to form, the speed is increased to finish the kneading. The grid remains in place throughout, allowing ingredients to be added without stopping the machine and the consistency to be checked at any moment. When the dough is ready, the bowl is removed and the spiral lifted clear.
The bowl, spiral and dough-splitting rod are made of AISI 304 stainless steel, which resists corrosion and is easy to sanitise. The body is finished in a durable powder-coated steel that withstands daily use in a busy kitchen.
Two speeds are provided: the lower speed blends ingredients without overheating, while the higher speed completes the kneading in less time. A 400 V three-phase supply is required, which is standard in professional bakeries and pizzerias. The 22 litre bowl holds up to 18 kg of dough, making it suitable for medium batches of bread, pizza or pastry. The unit weighs 73 kg, so it is mounted on fixed legs and moved only when necessary. Its footprint of 400 mm by 690 mm fits on most worktops or stands.
Cleaning involves removing the bowl and spiral, washing them in warm water with detergent, and drying them before reassembly. The safety grid and the inside of the bowl housing are wiped down after each use to prevent dough build-up. The motor and gearbox are sealed and require no maintenance beyond keeping the vents clear of flour dust.
The mixer is listed in the PIZZA GROUP catalogue under spiral mixers for professional bakeries and pizzerias.
