A spiral mixer draws the dough into a rotating spiral hook that stretches and folds it repeatedly. The hook's helical shape lifts the mass from the bottom of the bowl, aerating the dough evenly without tearing the gluten strands. This method produces a smooth, elastic dough in less time than a planetary mixer, and is especially effective for high-hydration mixtures used in pizza and artisan breads.
The operator lowers the bowl into position, locks it, and pours in the flour and water. The variable-speed control is set to the desired mixing stage—low for initial blending, higher for kneading—and the machine started. While the spiral turns, the operator can add salt, yeast or other ingredients through the safety grid without stopping the motor. The grid also lets the operator check the dough's consistency at any point. Once the dough is ready, the machine is stopped, the bowl unlocked and lifted out, and the dough removed for proofing.
The bowl, spiral hook and dough-splitting rod are made of AISI 304 stainless steel, which resists corrosion and is easy to sanitise. The main body is painted steel, and the safety grid is stainless steel mesh.
The variable-speed control adjusts the mixing intensity, allowing the operator to tailor the process to different dough types and hydration levels. The 1.5 kW motor provides enough torque for dense doughs without overloading a standard 230 V single-phase circuit. The 53 litre bowl holds up to 44 kg of dough, making it suitable for medium-scale production in pizzerias and bakeries. The 112 kg weight means the unit is floor-standing and requires a stable worktop or stand. The footprint of 530 mm by 860 mm fits into most professional kitchen layouts without crowding adjacent equipment.
After each use, the bowl, spiral and rod are removed and washed in hot water with detergent, then rinsed and dried. The stainless steel surfaces can be sanitised with food-safe disinfectant. The safety grid is wiped down and the painted exterior cleaned with a damp cloth. Regular inspection of the spiral hook and bowl for wear ensures consistent mixing performance.
The IF53 VS is a variable-speed spiral mixer designed for professional dough preparation in pizzerias, bakeries and pastry shops.
