A refrigerated table maintains ingredients at serving height, allowing staff to access containers without bending. The unit removes heat using a compressor and refrigerant, with a fan ensuring even temperature distribution across all shelves to prevent warm spots.

The GEMM TAP/21S accommodates 60x40 cm gastronorm containers. Seven pairs of runners, spaced at 75 mm intervals, allow adjustable shelf heights. The operator sets the temperature via a 2.8-inch touch-sensitive digital panel, and the system starts automatically. Cold air circulates evenly, while an automatic defrost cycle melts ice on the evaporator coil, evaporating condensate without manual intervention. The 50 mm thick insulation minimises temperature loss when the door is opened.

Constructed from stainless steel, the unit resists corrosion and simplifies cleaning. The worktop provides a stable surface for food preparation. The technical compartment on the right side allows easy access to the compressor and controls. The 2090 mm length fits standard kitchen layouts, while the 770 mm depth ensures containers slide in and out smoothly.

With a 404 L capacity, the table stores multiple 60x40 cm containers. The 0 to +8 °C range preserves fresh ingredients without freezing. The 0.410 kW power rating results in a 2.3 kWh daily energy consumption, compatible with a 230 V single-phase circuit. The 163 kg weight requires two people for movement, but adjustable feet ensure stability on uneven floors.

Cleaning is simple: smooth stainless steel interiors and automatic condensate removal eliminate manual draining. Runners clip out for washing, and the door seal can be wiped clean. No additional accessories are needed beyond the included seven pairs of runners.
