The convection oven uses a fan to circulate hot air throughout the cooking chamber, distributing heat evenly across all trays. This cooking method prevents cold spots and accelerates the cooking process by transferring heat directly to the products rather than relying solely on radiant heat. This helps achieve uniform browning and shorter baking times, which is particularly important in professional kitchens where food is prepared in multiple batches.

The FM Industrial RXL 304 accommodates four standard GN 2/3 gastronorm trays measuring 430 × 340 mm. The operator sets the required temperature up to 250 °C using the manual regulator, then selects a cooking time of up to 60 minutes or continuous operation mode. Indicator lights provide information about the heating process and timer operation. The double-glazed door helps retain heat inside the cooking chamber while allowing the operator to observe the trays and monitor the cooking process.

The cooking chamber is made of AISI 430 stainless steel, which is corrosion-resistant and promotes heat reflection inside the chamber. The standard equipment includes three perforated aluminium trays, with 80 mm spacing between tray levels, allowing air to circulate above and below each tray. Dual-position guides allow the use of both the supplied trays and deeper containers. The ergonomic handle with its rounded shape makes opening and closing the door easier during daily operation.

The appliance has an electrical power rating of 3.1 kW and requires a single-phase 230 V power supply, commonly used in medium-sized professional kitchens. The oven has a footprint of 590 × 625 mm, allowing it to be placed on most standard worktops. The appliance weighs 34 kg and can therefore be moved by two people without special transport trolleys. The maximum operating temperature is 250 °C, making it suitable for baking, roasting and reheating food, but not for grilling at extremely high temperatures.

To clean the oven, remove the trays and wipe the stainless steel interior with a damp cloth. The perforated trays can be washed in a commercial dishwasher. The double-glazed door should be cleaned with a non-abrasive cleaning agent to avoid scratching the glass. The safety thermostat protects the appliance against overheating and does not require regular adjustment.

The RXL 304 H version is also available with a built-in humidification system, offered at an additional cost.
