The operator positions the stand beside the oven, pulls the tray out onto the rails, then wheels the stand away. When the tray is ready to return, the same rails guide it back into the oven without tilting or spilling. The sequence is repeated for each tray, so multiple batches can be staged at once without crowding the oven or the work surface.

Built from stainless steel, the stand resists corrosion and staining from steam, fat and cleaning chemicals. The frame is open, allowing air to circulate around the trays so they cool evenly and quickly.
