The BCT/05 blast freezer is an ideal solution when rapid and safe freezing is needed to preserve product structure, quality, and flavor, while simultaneously ensuring energy efficiency and easy maintenance.
Gets rapidly lower the core temperature of foods: chilling from +90°C to +3°C in 90 minutes and freezing from +90°C to -18°C in 240 minutes.
A shock freezer rapidly pulls heat from food, dropping its temperature far faster than a standard refrigerator or freezer. This swift cooling locks in texture, flavour and moisture, preventing large ice crystals from forming and preserving quality. The process relies on powerful fans circulating cold air evenly around every tray, ensuring uniform results whether chilling delicate pastries or freezing dense meat joints. By controlling fan speed, the unit can handle fragile items gently or accelerate cooling for bulk loads, all while maintaining precise temperature control throughout the cycle.
The GEMM BCT/05 is loaded with standard gastronorm trays or ice-cream containers, then set via the 7-inch touchscreen. Choose between chilling or freezing modes, select time-based or core-probe activation, and adjust fan intensity for delicate or robust products. Specialised cycles include continuous operation, fish sanitising, pre-chilling and drying, each tailored to specific kitchen tasks. Once started, the unit monitors progress, automatically defrosting with hot gas to keep the evaporator clear without manual intervention. A USB port logs data for HACCP compliance, allowing easy record-keeping of each batch.
The cabinet is built from stainless steel, resisting corrosion and simplifying daily cleaning. Insulation 60 mm thick keeps the cold in and energy use down, while a ventilation control system adjusts airflow to match the selected programme. The unit accepts 5 GN 1/1 trays (600 x 400 mm) or 6 ice-cream trays (360 x 160 x 120 mm), giving flexible storage for everything from sheet cakes to individual desserts.
A power rating of 1.039 kW indicates the load on the electrical circuit, suitable for a single-phase 230 V supply common in professional kitchens. The refrigerant R290 is a hydrocarbon with low environmental impact, chosen for its efficiency in rapid temperature changes. The footprint of 800 x 750 mm fits into most worktop layouts, while the 900 mm height allows easy access without stooping. Climatic class 5 ensures reliable operation even in hot, humid kitchen environments.
Cleaning involves wiping the stainless steel interior and exterior with mild detergent, removing any food debris from the tray runners. The automatic defrost cycle keeps the evaporator clear, but occasional checks ensure the drainage path remains unblocked. The touchscreen interface guides maintenance prompts, and the USB port can export cleaning logs alongside temperature records.
The BCT/05 is supplied with a tray structure and 67 mm pitch runners, ready to accept standard gastronorm and ice-cream containers straight from delivery. No additional accessories are required to begin operation, though specialised probes and additional trays can be added as needed.
This model is categorised under professional blast chillers and freezers, positioned for establishments requiring rapid, controlled cooling with minimal manual oversight.
