A pastry tray provides a flat, rigid surface that conducts heat evenly from deck ovens and proofing cabinets to dough pieces. Aluminium spreads the heat without hot spots, so each item bakes at the same rate and colour across the batch. The metal is light enough to slide in and out of ovens on racks or peels, yet strong enough to hold multiple loaves, rolls or pastries without sagging.
To use the tray, the operator arranges the shaped dough directly on the aluminium surface. There is no need for parchment or flour dusting; the natural non-stick property of the metal lets baked goods release cleanly once cooled. The tray is loaded into the oven, rotated as required, and removed when the bake is complete. After cooling, the tray can be wiped, stacked and stored until the next batch.
The tray is made of aluminium, chosen for its thermal conductivity and low weight. The edges are rolled for strength and to protect hands during handling.
The 600 x 400 mm footprint matches the standardised rack and oven shelf spacing used in professional bakeries and central production kitchens. This size allows the tray to slide smoothly on roller racks and fit side by side with other trays of the same dimension, maximising oven capacity without wasted space.
Cleaning is straightforward: after each use the tray is wiped with a damp cloth to remove any residue. For deeper cleaning, a mild detergent and non-abrasive pad can be used without damaging the aluminium surface. The tray should be dried thoroughly before stacking to prevent moisture build-up.
