Dishwashing Basin

A dishwashing basin is a specialized stainless steel element designed for pre-treatment, soaking or manual dishwashing in HoReCa kitchens. High-capacity basins allow a large number of dishes to be processed simultaneously before they are placed in the dishwashing machine. A soaking basin also reduces the amount of chemicals used in the dishwashing machine, as pre-soaked dishes do not require such an intensive washing programme. The stainless steel basin meets HACCP requirements and is fully disinfectable. The basin is also a stand-alone solution for dishes that must not or cannot be washed in a dishwashing machine, such as large pots. BHS offers these basins as part of the Stainless Steel Furniture for the Dishwashing Area range to businesses across Europe.

A dishwashing basin provides a specialized workspace for pre-treatment, soaking and manual dishwashing in HoReCa kitchens. A high-capacity basin allows a large quantity of dishes to be processed at the same time, soaking heavily soiled dishes or washing items that must not be placed in a dishwashing machine. The basin is an essential element in a complete dishwashing area, providing flexibility and a HACCP-compliant pre-treatment option for all HoReCa kitchens.

Advantages of soaking in the washing process

Pre-soaking dishes in the basin reduces the load on the dishwashing machine, as dishes to be cleaned after soaking do not carry as much dirt. Soaking is particularly effective for heavily soiled dishes — pots, frying pans, graters — where dry residues are difficult to remove. The consumption of chemical agents in the dishwashing machine is reduced, as soaked dishes do not require such an intensive washing programme.

Dishes outside the dishwashing machine

Some kitchen items must not or cannot be washed in a dishwashing machine — large pots, expensive decorative dishes, plastic elements or equipment parts. The basin provides a suitable manual washing area for these items. The option of manual washing next to the dishwashing machine ensures complete flexibility in dish processing without unnecessary movement to another kitchen area.

HACCP requirements in the basin area

A stainless steel basin fully complies with HACCP hygiene requirements and food safety regulations. The steel surface does not absorb bacteria or moisture, is corrosion-resistant and easy to disinfect with standard food industry cleaning and disinfection agents. Regular basin disinfection after each shift is a mandatory hygiene procedure.

Integration into the dishwashing system

A dishwashing basin works in coordination with pre-wash tables with shelf and the dishwashing machine. The basin is usually located at the pre-wash stage — where dishes are soaked before being placed in the dishwashing machine. A compatible equipment system ensures a smooth flow of dishes throughout the washing process and minimizes manual movement between different washing stage elements.

Choosing the basin size

The basin size should be chosen according to the largest dishes or pots to be processed. A basin with a length of at least 600×500 mm and a depth of 250–300 mm is usually recommended to ensure more comfortable work with larger items. Extra-large dishes can only be processed in a suitably sized basin, so BHS helps select the most suitable basin option for a specific kitchen.

Stainless steel quality

Stainless steel is the standard material for professional kitchen basin manufacturing, providing the necessary durability against constant exposure to water, alkaline and acidic cleaning agents. The steel basin withstands intensive daily use without corrosion or degradation of hygiene properties for many years. Investing in a stainless steel basin is a long-term investment in improving kitchen hygiene and efficiency.

Daily maintenance and cleaning

Daily basin maintenance includes washing with a disinfectant solution, checking the siphon and verifying water drainage after each shift. Regular siphon cleaning prevents blockages, which can occur from food residues during intensive use. A stainless steel basin is easy to clean with a brush and standard food industry disinfectant solution without special tools.

Water consumption and efficiency

Using a soaking basin optimizes water consumption in the washing process. Concentrated soaking in the basin with a relatively small amount of water is more efficient than prolonged rinsing under running water. Proper basin use reduces overall water consumption in the washing area, which is an important sustainability argument for kitchens that focus on resource efficiency.

Basin placement in the washing area

The placement of a dishwashing basin in the washing area is an important factor in ensuring efficient dish circulation. The basin is usually placed at the pre-wash stage, before the dishwashing machine inlet, so that soaking takes place before dishes are placed in the machine. It is essential to ensure water supply and drainage connections for the basin according to its placement in the washing area. BHS helps plan the optimal basin placement in the washing area layout, taking into account the existing water supply and drainage infrastructure.

Staff ergonomics when working with the basin

The ergonomics of working with the basin is an important factor in dishwashing efficiency and long-term staff health. The correct basin height allows staff to work without excessive back or shoulder strain, even during intensive shifts. The basin depth should be sufficient for larger dishes but not too deep, so that staff can easily reach the bottom during cleaning. BHS helps select the ergonomic basin parameter combination according to staff needs and kitchen specifics.

Basin combination with washing equipment

A dishwashing basin works effectively in combination with a pre-wash table and dishwashing machine as an integrated washing system. The basin’s soaking function prepares dishes for machine washing, while the manual washing function complements the machine with large item processing. Dishwashing areas with basins and table combinations can be designed as an efficient and HACCP-compliant system with the help of BHS. Restaurants and canteens achieve optimal washing capacity by correctly combining the basin with the rest of the washing equipment.
