DROP-IN Serving Display Cases DROP-IN — the canteen modular systems DROP-IN serving display case is a built-in serving display element that integrates into a cut-out in the counter surface; the glass protective screen displays products visually attractively while protecting them from direct contact by visitors in HoReCa businesses.

DROP-IN serving display case installation principle

DROP-IN Serving Display Cases DROP-IN — the DROP-IN installation principle means that the case is inserted from above into a cut-out in the counter surface according to the external dimensions of the case; the counter surface and the upper lip of the case form a single smooth serving surface. Counter surface preparation — the dimensions of the cut-out in the counter surface must correspond to the connection size of the specific DROP-IN model; the cut-out is made according to the manufacturer's specifications; proper finishing of the cut-out ensures a hermetic connection between the case and the counter. Comparison with other installation methods — unlike a freestanding case, the DROP-IN is fully integrated into the counter; unlike a case with a separate counter-body, the DROP-IN is more compact and allows any existing counter structure to be used as a base; see Counters with Serving Display Cases and Serving Display Case. BHS supplies DROP-IN cases.

DROP-IN case types by temperature function

DROP-IN Serving Display Cases DROP-IN — the DROP-IN serving display case is available in various temperature configurations to meet the serving requirements of different menu sections. Hot DROP-IN case — the internal heating system maintains the temperature of the containers placed inside the case at 65–80°C; suitable for serving hot menu items such as soups, sauces, meats and side dishes; the heating system includes a lower heating element and/or side heaters; the glass screens remain almost condensation-free (if anti-condensation heating is present). Cold DROP-IN case — the internal cooling system maintains the products at 2–8°C temperature; suitable for cold salads, dessert creams, fresh fruits and chilled cheesecakes; compressor or chilled air circulation system; see Canteen Modular Systems. Neutral DROP-IN case — without heating or cooling; products are displayed at room temperature; suitable for bread products, baked pastries and other items for which temperature maintenance is not critical.

HACCP and hygiene in the DROP-IN case

DROP-IN Serving Display Cases DROP-IN — proper temperature maintenance, recorded in the HACCP log, and regular cleaning of the DROP-IN case ensure compliance with HACCP. Product temperature monitoring — staff measure the temperature of the products in the case regularly with a probe thermometer according to the HACCP plan; hot case products must remain above 63°C; cold case products must not exceed 8°C; measurements are recorded in the log. Glass screen hygiene function — the glass protective screen of the DROP-IN case is a critical hygiene element that prevents direct contact by visitors with the displayed products, protects against coughing/sneezing droplets reaching the products and prevents foreign objects from entering; the screen is cleaned at least once a day with a food-safe cleaning agent; see Canteen Modular Systems.
