Serving and Sales Carts

Serving and Sales Carts are mobile trolleys with multiple shelves, suitable for both the HoReCa sector—serving restaurants, hotels and banquet halls—and retail—demonstrating and transporting products in shops and markets. A stainless steel construction ensures durability and hygiene, which is essential near food products, and complies with HACCP sanitary requirements. In restaurants and hotels, serving trolleys significantly increase staff efficiency by reducing the number of movements needed between the kitchen and the serving area. BHS offers these trolleys as part of the HoReCa Furniture range to businesses across Europe.

Serving and Sales Carts combine two main functions—they are equally useful for serving portions in a restaurant dining room and for organising and presenting products in a retail space. Mobility and multi-shelf construction increase work efficiency in places with high customer traffic, allowing a larger quantity of dishes or products to be transported in a single trip than would be possible by hand.

Applications of serving trolleys

In restaurants and hotels, serving trolleys help transport food from the kitchen to the serving area, collect used dishes from tables and carry clean dishes from the dishwashing area.

Banquet and conference service uses larger serving trolleys capable of holding stainless steel GN pans or a large number of dishes, allowing quick service to a large number of guests simultaneously. In buffet service format, trolleys are also used as mobile serving stations with heat retention capability.

Applications of sales trolleys

Multi-shelf trolleys allow a larger quantity of goods to be handled at once, reducing the time needed for product preparation and placement.

In bakeries, patisseries and food production facilities, trolleys are used to transport flour, baking trays and finished products from production areas to storage or sales areas. Special pastry pan trolleys with indentations for GN format pans ensure stable transport and prevent pans from sliding.

Construction and materials

Stainless steel trolleys are the preferred solution in the HoReCa sector, just like other stainless steel kitchen furniture—the material is hygienic, easy to clean and resistant to corrosion. Shelf height is often adjustable, allowing the trolley to be adapted to various heights of dishes or products.

Wheels are a very important part of trolley functionality—professional models are equipped with large-diameter rubber or polyurethane wheels that glide smoothly even on dirty or uneven surfaces. Lockable wheels ensure stable positioning in a stationary position during service.

Sizes and capacity

Serving trolleys are available in various sizes—from compact 3-shelf models for smaller restaurants to large 5–6 shelf versions for hotels and large canteens. The load-bearing capacity of the shelves is measured in kilograms—it must be ensured that the chosen trolleys’ corresponding load does not exceed the intended weight when fully loaded with dishes or products.

Maintenance and cleaning

Stainless steel trolleys should be cleaned regularly after each use. Shelves should be washed with an alkaline solution and dried to prevent moisture from remaining on the metal surface. Wheels and their axles should be checked once a month for deformation and, if necessary, lubricated with food-safe grease. The locking mechanism of lockable wheels should be checked regularly, as it is a safety feature that prevents trolley movement in a stationary position.

GN system integration

Some serving trolleys are specially designed for GN (Gastronorm) standard pans—with indentations or supports that ensure stable transport of 1/1 and 1/2 size GN pans. Such trolleys are particularly useful in canteens and banquet service providers, where food is transported from the kitchen to the serving point in a GN pan system. GN compatible trolleys are also effective in buffet organisation, where GN pans can be directly placed in a heat retention station.

Work safety with trolleys

Heavily loaded trolleys can cause injuries if not pushed correctly or if the wheels suddenly lock on an uneven floor. Staff should be trained in the correct pulling or pushing of trolleys—do not place excessive weight on the upper shelves, which raises the centre of stability and increases the risk of tipping. Work safety regulations for manual load handling also apply to the use of trolleys.

Banquet and event service

Event centres, conference rooms and banquet halls use serving trolleys for simultaneous service to a large number of guests. Transporting many dishes or drinks in one trip from the kitchen to the hall is the most efficient way to ensure quick service in banquet conditions. A large number of trolleys allows several tables to be served simultaneously without long waiting periods between service rounds.

Seasonal use and storage

For businesses operating seasonally—outdoor cafés and event organisers—trolleys should be stored in a clean, dry space when not in use. Wheels should not remain in a damp environment for long, as this accelerates the wear of the wheel rubber. When storing trolleys, it is recommended to lock the wheels in a stationary position to prevent them from moving in a confined space.

Purchase planning and quantity calculation

The required number of serving trolleys depends on the size of the business and the pace of service. A restaurant with 100 seats should have at least 3–4 serving trolleys to ensure uninterrupted service. For retail, it is necessary to calculate how many trolleys are needed for shelf restocking within the available time window each day. BHS helps plan the correct number and configuration of trolleys.

Combining trolleys with other equipment

Serving trolleys can be used together with heat retention accessories, tray stands and dishwashing systems in operation. In an efficient kitchen, each trolley has a defined role—clean dish trolleys, dirty dish trolleys and order fulfilment trolleys. The Serving Trolleys and sales trolley collection in the BHS range allows a complete system to be created for the specific needs of a business.
