Hot Ceramic Surfaces — a hot ceramic surface in the canteen modular system is a heating element with an actively heated ceramic plate; the ceramic heats evenly and transfers heat to products through bottom contact, keeping them at the optimal serving temperature for HoReCa businesses.

Heating principle of hot ceramic surfaces

Hot Ceramic Surfaces — a hot ceramic surface operates using electric heating elements located beneath the ceramic plate; the heating elements warm the ceramic to the set temperature, and the ceramic then evenly distributes heat across the entire contact area. Thermal capacity of ceramic — ceramic is a material with good thermal capacity; it heats up quickly and retains heat after the heating elements are turned off; the heat retention time depends on the thickness and mass of the ceramic. Thermostatic control — the built-in thermostat regulates the operation of the heating elements, maintaining the ceramic surface at the set temperature; models typically allow the surface temperature to be adjusted within a 50–80°C range; see Canteen Modular Systems.

Ceramic surface as a modular serving element

Hot Ceramic Surfaces — a hot ceramic surface is a modular element that can be integrated into an existing service front or used as a standalone heating insert in various configurations. Standalone option — the hot ceramic surface is housed in its own body, which can be placed on any counter surface; flexible placement according to current needs; easier to move compared to the built-in version; see Counters with Hot Ceramic Surface.

Hot ceramic vs. hot granite surface

Hot Ceramic Surfaces — hot ceramic and hot granite surfaces are functionally similar; both provide bottom heat through a contact heating mechanism, but the properties of the materials differ. Ceramic surface — synthetic, dense, non-porous surface; uniform structure without the natural pattern of stone; easier to clean due to the absence of porosity; wider range of colours and textures; more hygienically advantageous. Granite surface — natural stone with a unique pattern and aesthetic; porous structure requiring impregnation; visually more attractive for premium displays; requires more maintenance; see Hot Granite Surfaces and Counter with Hot Granite Surface.

Maintenance and hygiene of the hot ceramic surface

Hot Ceramic Surfaces — daily maintenance of hot ceramic surfaces is simpler than that of granite surfaces, as the dense structure of the ceramic prevents grease from becoming embedded in the material. Daily cleaning — after the surface has cooled, clean the ceramic with a soft cloth or sponge and a food-safe disinfectant; food residues that have burned onto the surface should be cleaned with a plastic scraper without damaging the ceramic glaze; metal scrapers and abrasive powders are not suitable for ceramic. List of prohibited cleaning agents — acidic cleaning agents (e.g. vinegar), abrasive alkaline powders and plastic scrapers with metal edges are not suitable for ceramic surfaces; see Canteen Modular Systems. BHS provides hot ceramic surfaces across Europe.

HoReCa usage scenarios

Corporate canteen with hot ceramic surfaces — in the pizza and flatbread serving area, the hot ceramic surface keeps products warm; a compact and hygienic solution; the easy-to-clean surface facilitates compliance with the HACCP protocol; BHS equipment provides a professional solution. Hotel buffet with hot ceramic surfaces — warm breakfast bread products (croissants, toast, baked bread) displayed on the hot ceramic surface; a visually clean and smooth surface that matches the high-class hotel aesthetic. Pizza restaurant with ceramic heating surface — keeping prepared pizzas warm before serving on the hot ceramic surface; quick to clean after each service day; BHS supplies the products. BHS offers hot ceramic surfaces to HoReCa businesses across Europe.

Frequently asked questions

Is the hot ceramic surface suitable for baking bread? Hot Ceramic Surfaces — the hot ceramic surface in the canteen modular system is designed to maintain the warmth of food, not for baking; baking (e.g. baking pizza on a ceramic plate in a pizza oven) requires different equipment; this ceramic surface keeps already prepared food warm before serving; see Canteen Modular Systems.

What is the maximum temperature a hot ceramic surface can reach? Hot Ceramic Surfaces — the thermostatic regulator of a standard hot ceramic surface typically allows the surface temperature to be set within a 50–80°C range; higher temperatures may be available in special models; for specific temperature specifications of particular models, consult BHS specialists; see also Counters with Hot Ceramic Surfaces and Shelf.
