A disc cutter transforms whole vegetables, fruits or cooked meats into cubes, sticks or slices without pre-cutting. The food is pushed through a rotating blade assembly; the shape of the blade determines the final piece. For cubing, two discs work in sequence: the first disc cuts parallel grooves, the second disc crosses those grooves at right angles, producing cubes in a single pass. This method keeps the pieces uniform and the yield high, reducing waste and preparation time in a busy kitchen.
The FIMAR D20x20 Disc D is the first stage of the cubing process. The operator loads whole produce into the feed tube and starts the machine. The disc rotates, cutting the food into parallel strips. Once the strips are collected, they are returned to the feed tube and passed through the companion Disc E, which slices the strips crosswise into cubes. The sequence is continuous and requires no manual cutting or turning of the food.
Constructed from stainless steel, the disc resists corrosion and withstands repeated washing. Its 20 mm by 20 mm size refers to the spacing of the blades, setting the width of the strips and, ultimately, the size of the cubes when paired with Disc E.
Cleaning follows the same sequence as use: remove the disc from the machine, wash it in warm water with a non-abrasive brush, rinse and dry before storage. The stainless steel surface allows thorough sanitising without damage to the blades.
The D20x20 Disc D is part of a modular system and is used in conjunction with FIMAR Disc E for cubing. It fits standard FIMAR food processors designed for interchangeable discs.
