An electric gyros grill rotates a vertical spit of stacked meat while heating it from the side, so the outer layer crisps evenly and the juices baste the layers beneath. Six heating elements surround the spit, concentrating heat where it meets the food without drying the centre. The rotation keeps the meat turning past the elements, exposing every surface to the same intensity and preventing hot spots that would char one side while leaving another undercooked.

The operator loads the spit by stacking the meat onto the central rod, securing it with the retaining fork, and sliding the assembly into the grill's vertical guides.
