A chicken grill that rotates whole birds on stainless steel spits over radiant heating elements, browning the skin evenly while the meat cooks through without drying. The rotation exposes every part of the bird to the same heat, eliminating hot spots and ensuring consistent results across the full capacity of up to ninety 1 kg chickens at once.
Heat rises from electric elements mounted behind ceramic insulation, which reflects it forward and reduces waste. Tempered Low-E glass on the front panel keeps the heat inside while allowing the operator to watch the colour and texture of the skin without opening the cabinet. Interior lighting brightens the birds, making it easier to judge doneness and to present the product attractively when the glass is viewed from the dining area.
The operator loads each bird onto a tubular spit, securing it with the prongs so that it stays balanced as the motor turns the spit. Eight spits are provided for cooking; an additional seven are included for pre-cooking if the kitchen runs a two-stage process. Each spit measures 960 mm long and 12 mm square, giving a firm grip on the meat. Once the birds are loaded, the power regulators are set to the desired level and the grill is started. The motor turns the spits continuously, rotating the birds past the heating elements. A removable stainless steel fat collection bucket catches drippings, preventing flare-ups and simplifying cleaning.
The supporting frame and all interior surfaces are made of stainless steel, chosen for its resistance to corrosion and ease of sanitising. Ceramic insulation lines the cabinet, reducing heat loss and cutting energy use. The tempered Low-E glass front panel is sealed to the frame, minimising draughts and maintaining a stable cooking environment.
Controls consist of power regulators for the heating elements, allowing the operator to adjust the intensity of the heat. The motor that drives the spits runs at a fixed speed, rotating the birds steadily throughout the cooking cycle.
A power rating of 30 kW indicates the load the grill places on the electrical supply; it requires a 400 V three-phase circuit, the standard for heavy-duty catering equipment. The footprint of 1175 mm wide, 500 mm deep and 1630 mm high determines the space needed on the worktop or floor, and the height allows the operator to load and unload birds without bending. The capacity of up to ninety 1 kg chickens sets the maximum throughput for a single batch, making the grill suitable for high-volume service.
Cleaning involves removing the fat collection bucket and emptying it, then wiping down the stainless steel surfaces with a damp cloth and mild detergent. The spits and prongs are taken out and washed separately. The glass panel is cleaned with a non-abrasive cleaner to avoid scratching the Low-E coating.
