Adjustable flour duster
A conical rounder transforms irregular dough pieces into smooth, evenly rounded rolls by guiding them through a rotating cone and shaped channels. The dough is gently rolled against the cone's surface, which tightens the outer layer while preserving the internal structure. This method prevents distortion, even with softer doughs, by distributing pressure evenly and avoiding abrupt compression. The result is a uniform shape that rises predictably during proofing and baking, with a consistent crust and crumb.
The SIGMA Conical Rounder T2 follows a clear sequence. Dough pieces are placed onto the infeed conveyor, where they are carried towards the rotating cone. As they enter the cone, the channels guide the dough in a spiral path, rolling it into a ball. A second conveyor belt then flips the dough so the sealed edge faces downward, ensuring a smooth surface. The adjustable flour duster lightly coats the dough to prevent sticking without altering the final texture. Once shaped, the rolls exit onto a worktop or further processing line.
The machine is built with aluminium channels coated in a non-stick material, reducing dough adhesion and simplifying cleaning. The rotating cone is treated with either non-toxic nickel or Teflon, chosen for durability and food safety. An adjustable flour duster allows control over dusting levels, while the entire unit is mounted on wheels for mobility within the bakery. The power requirement of 0.8 kW covers the motor and cone rotation; when fitted with an air blower unit, the total rises to 1.5 kW.
The 900 mm width and depth fit within standard bakery workspaces, while the 1400 mm height allows comfortable operation without overhead obstruction. At 310 kg, the rounder is stable during use but can be moved when needed. The weight range of 300–3900 g accommodates small rolls through to larger artisan loaves, making it suitable for varied production lines.
Cleaning involves wiping down the aluminium channels and cone with a damp cloth to remove residual flour and dough. The non-stick coatings reduce build-up, while the flour duster can be emptied and brushed clean. Wheels allow the unit to be repositioned for thorough access during maintenance.
