The Rollmatic R65/12 is a manual dough sheeter designed for professional bakeries, allowing precise shaping and laminating of dough with minimal effort. Its counter-rotating rollers ensure even compression and stretching, accommodating various dough types from pizza bases to puff pastry without tool changes. The operator maintains control over speed and pressure, preventing overworking or tearing delicate doughs.
The machine features folding and extendable side tables for a stable work surface. Dough is placed on the infeed table and guided through the rollers. Foot control or electric impulse keys enable instant reversal of the rollers to correct misfeeds without stopping. A micrometric adjustment wheel allows fine-tuning of the roller gap for exact thickness settings. Safety microswitches on the cylinder guards and flour drawer stop the rollers if either is opened during use, ensuring operator safety.
Mounted on a sturdy base with castors, the R65/12 can be easily moved and locked into position. A quick-release scraper system removes dough residue without tools, while a belt tensioning lever facilitates rapid adjustments or belt replacement. The integrated flour drawer dispenses flour to prevent sticking, and its microswitch prevents operation while refilling.
Constructed from stainless steel and aluminium, the R65/12 is built for daily commercial use. It operates on a 400 V three-phase power supply, standard in professional kitchens. The base weight ensures stability during operation. When not in use, the side tables fold flat, reducing the machine's footprint to fit through doorways and allow compact storage.
Cleaning is simple: quick-release scrapers lift away for washing, the flour drawer slides out, and the belt can be loosened for wiping. The castors enable easy movement to a wash-down area, and smooth surfaces prevent dough build-up.
